Gorgonzola and Hazelnut Pork Tenderloin

Impress your guest with this easy elegant pork roast topped with blueberry chipotle sauce.
Ingredients
- 1 pork tenderloin, cut lengthwise and butterflied
- 1 cup crumbled gorgonzola cheese
- 2/3 cup chopped hazelnuts
- Montreal steak seasoning
- Salt and pepper to taste
- Sauce:
- 1/2 cup blueberry sauce or syrup
- 1/2 cup honey
- 1/2 cup ketsup
- 1 chopotle in adobo sauce, chopped and smashed with knife
- 1/2 cup shallots, chopped finely
- 1 tsp ground ginger
- 2 tsp lime juice
- 1/2 tsp dry mustard
- 1 tbsp rice wine vinegar

Method
Sprinkle gorgonzola and hazelnuts on 1/2 tenderloin. Fold other side over and secure with string or toothpicks. Season both sides with steak seasoning, salt and pepper. Place on grill, or roast in oven, 45 minutes or until internal temperature of 170 degrees. Top with Blueberry Chipotle Sauce: Combine all ingredients in a medium saucepan, bring to boil, and simmer 15 minutes.
