Festive Egg Squares
This baked brunch dish layers cooked pork sausage, mushrooms, green onions, tomatoes, and mozzarella cheese in a rectangular baking dish, with a mixture of eggs, milk, and Bisquick poured over all.
Ingredients
- 1 pound bulk pork sausage, cooked and drained
- 4-ounce can sliced mushrooms, drained
- 1/4 cup thinly sliced green onions
- 2 medium tomatoes, seeded and chopped
- 2 cups shredded mozzarella cheese
- 1 cup buttermilk baking mix
- 12 eggs, beaten
- 1 cup milk
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- 1/2 teaspoon oregano

Method
Layer the sausage, mushrooms, green onions, tomatoes, and cheese in a greased 13x9x2 inch baking dish. Beat together the remaining ingredients; pour over sausage mixture. Bake, uncovered, in a 350 degree oven until golden brown and set, about 30 minutes. Let stand a few minutes before cutting to serve.
Notes: I assemble this the night before and put in the refrigerator. In the morning, it takes about an hour to bake, since everything is chilled thoroughly.
