Farmer's Breakfast
A hearty breakfast or brunch with hashbrowns, eggs, ham, and vegetables that are all cooked the same skillet.
Ingredients
- 1 T olive oil
- 2 c frozen diced has brown potatoes with onions and peppers
- 1 c diced cooked ham
- 6 beaten eggs
- 1/3 c water
- salt and pepper to taste
- herbs can be added to taste
- 1/4 c shredded cheddar cheese

Method
Add oil to large skillet and heat. Add potatoes in a single layer and cook covered over medium heat for about 5-7 minutes (until tender). Add ham. Combine eggs, water, salt, pepper, and herbs and pour over ham mixture. Cook uncovered over medium heat until eggs are just set, turning mixture occasionally with a wide spatula. Sprinkle with cheese and serve immediately.
