Fancy Smancy Pork Loin

Your guests will be impressed when you stuff pork loin with peppers and onion, then bake until tender in a seasoned butter sauce.
Ingredients
- 4 lb boneless pork loin, quartered
- 3 tablespoons chopped garlic
- 1/4 cup butter, melted
- 1/2 cup fresh cilantro, chopped
- 1/4 cup sugar
- 1 tablespoon pepper
- 1/2 cup onion
- 1 cup green bell pepper, fine dice
- 1 teaspoon salt
- 1/2 teaspoon, crushed red pepper

Method
Combine butter, cilantro, sugar, pepper, salt and crushed red pepper in a medium mixing bowl and mix well. Place other ingredients in a small bowl and set aside. Into each piece of pork, cut a 3 inch slit in the top of meat. Mix garlic, onion and green bell pepper together. Using a spoon, stuff each slit with as much of this mixture as possible. If any mixture remains, add it to butter mixture that was set aside. Use foil under meat while spooning butter mixture over stuffed meats. Make sure to get butter mixture into slits and pour remaining butter mixture evenly on meat. Wrap each piece of meat loosely and place on grill for at least 2 hours, rewrapping meat if needed. If baking use 300 degrees for 3 hours. On the grill, flip foil wrapped meat about one hour into grilling time.
