Elaine's Dry Rub Pork Rib BBQ

Suggested proportions are given for the amount of red peppers, grated lemon peel, dried onion and garlic, brown sugar & cornmeal to use as a rub for beer-marinated grilled ribs.Ingredients
- Pork ribs for 4 servings
- 4 fresh rosemary sprigs
- 1 bottle beer
- Spice Blend:
- Dehydrated sweet red pepper
- Dehydrated red HOT pepper
- Dehydrated lemon zest
- Dehydrated onion
- Dehydrated garlic
- Salt
- Brown sugar
- Cornmeal

Pour beer into a clean plastic bag supported in a bowl. Place ribs into bag, ensuring all portions are covered. Marinate 2-3 hours, discard beer, and dry ribs with paper towels. Mix rub by hand. I usually put one part of each ingredient, except salt. I add only 1 teaspoon of salt to mix. Rub both sides of ribs with dry mix, then preheat and oil the grill. When grill is hot, reduce heat to medium-low, or low. Place presentation side down first, grilling at least fifteen minutes, then give the ribs a quarter turn. After another fifteen minutes, turn ribs over, and place a sprig of fresh rosemary on top of each piece. Close lid and continue cooking. The rosemary flavor will work into the ribs, adding a delightful taste. When ribs are golden brown, remove and serve.
Notes: Pork ribs are marinated in beer, then dried, and dry rubbed with a special blend of herbs and spices, then barbequed with fresh rosemary sprigs. A pleasure to the eyes as well as the stomach.
