Ecuadorian Grill Burgers

These grilled burgers contain several meats (ground pork, turkey & beef, plus chorizo and bacon) and seasonings, and are topped with cheese.
 

Ingredients

  • 1/4 pound EACH of ground pork, turkey, and beef
  • 2 fresh Chorizo sausage links, with casings removed
  • 3 strips of bacon, cooked, drained & crumbled
  • 1/3 cup chopped scallions
  • 2 tbsp. crushed garlic
  • 2 tbsp. ketchup
  • 1 tsp. cumin
  • 1 tsp. Spanish paprika
  • 1/3 cup diced red bell pepper
  • 1/3 cup diced red onion
  • 1/2 cup cilantro and flat leaf parsely, finely chopped
  • 1/2 tsp. EACH salt and pepper
  • 4 slices of pepper-jack jalapeno cheese
  • 4 Kaiser rolls or hambrger buns
  • Sliced tomatoes and lettuce leaves

Method

1. Combine everything except the cheese in a large bowl; mix well with hands. (Be careful not to overmix or burgers will be tough.) 2. Shape into 4 burgers. Cook them on a medium high grill about 7 minutes on each side. Put the pepper-jack cheese on them the last 2 minutes of grilling. 3. Put them on a roll or hamburger bun. (I would use a roll because they are big!) Top it with sliced tomatoes and lettuce and dig in.

 

Notes: This burger is mouth-watering and juicy. It reminds me of a South American-style barbecue. The best part is that most of the ingredients are inside the burger, so it's not so messy to eat.
