Easy Thai Pork Chops


This dish requires a few ingredients, but it is easy to put together and makes for an authentic and delicious dinner.



Ingredients:

  • 4 center cut pork chops
  • 3 tbsp oil
  • 1 12 can light coconut milk
  • 1/2 cup chicken broth
  • 1 small can anchovies
  • 1 bunch green onions, sliced
  • 1/2 red onion, diced
  • 2 carrots, diced
  • 2 stalks celery, diced
  • 2 wax peppers or jalapenos, seeded and diced
  • 4 cloves garlic, chopped fine
  • 3 tbsp flour
  • 2 tbsp fresh ginger, chopped fine
  • 2 tbsp soy sauce
  • 2 tbsp dry sherry
  • 1 tbsp honey
  • 1 tsp crushed red pepper, optional
  • 3 tbsp vegetable oil
  • Salt and pepper to taste
  • 2 cups cooked white rice

Method

Season chops with salt and pepper. Add 2 tbsp oil to 4 quart pan, heat to medium and brown chops. Remove chops to plate and pour off oil. Add 1 tbsp oil to pan on medium heat, add onion, garlic, ginger, carrot, celery, peppers and anchovies, and then saute until mushy. Work flour into mixture until smooth; add coconut milk, chicken broth, soy sauce, honey, crushed red pepper and sherry. Mix well to blend, and re-season if necessary. Add more broth if a looser sauce is desired. Add chops, cover and simmer for 30 minutes. Serve chops with sauce, white rice, and garnish with green onions.
