De-light-ful Ham, Egg, and Cheese Breakfast Carabonara
Ham or Canadian bacon, green onion, frozen peas & carrots, and milk (instead of cream) are combined with eggs, parmesan cheese and cooked pasta. This mixture is heated until the eggs are just cooked.
Ingredients
- 12 oz. pasta (gemelli, penne, bowties, etc.)
- 1 T. butter
- 6 oz. ham or Canadian bacon cut into 1/2" strips
- 1/2 c. sliced green onion (may be omitted)
- 2 c. frozen peas and carrots (rinse in hot water before adding)
- 1 c. milk
- 4 eggs
- 1/2 t. salt
- 1/2 t. pepper
- 1/2 c. grated parmesan cheese

Method
Cook pasta according to package directions. While pasta cooks, combine butter, ham, onion, and peas and carrots in a large skillet over Medium heat. Cook until hot (3-5 minutes.) Add milk and let warm until pasta is ready. Crack eggs into a small bowl and beat in salt and pepper. When pasta is ready, drain and add it to skillet. Stir to combine, then add eggs. Continue stirring until the eggs are cooked but still appear a little wet. Remove from heat. Add additional salt and pepper to taste, if necessary. Plate the pasta and garnish each serving with parmesan cheese. Serve immediately.
Notes: This is a light version of Pasta alla Carbonara which I've always thought should be served for breakfast.
