Boneless pork chops, seasoned with thyme, are skillet-cooked in broth and served with sour cream gravy.
In a small bowl, mix salt, thyme and pepper. Rinse pork chops and rub seasonings on chops. Braise chops on high heat until golden browned. Reduce heat. Place one slice onion on each chop. Slowly pour broth into skillet with chops. Bring broth to boil, cover and simmer for 30 minutes. In a sauce pan, melt butter, and add flour then whisk to make a roux. Remove chops and onion from skillet after simmering and set aside. Whisk roux into broth in skillet. Bring to a boil stirring constantly until thickened. Turn heat to low. Add sour cream and whisk. Return chops and onion to skillet and simmer uncovered for 5-10 minutes.

Serve this with mashed potatoes.
