Country Skillet Dinner


This easy meal combines hash brown potatoes with cubes of ham, shredded cheddar cheese, and peas.



Ingredients:

  • 8 cups frozen country-style hash brown potatoes
  • 3 Tbsp olive oil
  • 2 cups frozen peas (10 oz pkg)
  • 1 cup cubed ham
  • 1 cup shredded cheddar cheese

Method

In a non-stick electric fry pan, preheat oil to 350 degrees. Add hash browns, spread to cover bottom of pan and to a uniform depth. Cook 5 minutes. While hash browns are cooking, cook peas about 5 minutes in the microwave. Place ham cubes in a strainer and drain peas over ham cubes to warm. Or heat ham cubes in bowl at 50% (medium) power in microwave for 2-3 minutes. Turn hashbrowns and cook 5 more minutes. Chop hashbrowns slightly with metal spatula; mix in peas and ham. Top with cheddar cheese, turn off heat and let stand covered about 5 minutes or until cheese melts.

Notes: My kids just LOVE this dish! It's quick, easy and nutritious, so I'm happy, too!
