Collard Greens & Smoke Meat

Your choice of smoked meat stewed with greens and seasonings and a slightly sweet glaze.
 

Ingredients

  • 3 to 4 bunches of greens of your choice.
  • 1 to 2 pounds of smoke meat,smoke turkey meat, smoke ham hock, and or smoke neck bones.
  • 1 large onion.
  • 1/3 cup vinegar
  • 1 table spoon of salt or seasoning salt
  • 1 table spoon of black pepper
  • 1/2 teaspoon red crushed pepper
  • 1/2 teaspoon of garlic powder
  • 1 teaspoon of sugar.
 
Method

Wash and cut greens and remove steams or you can leave stems. Set aside. Chop onion, set aside. Wash meat place in boiling pot add salt, crushed pepper, black pepper, vinegar, garlic powder, sugar, bring to boil and reduce the heat to medium boil for one hour. Add greens and onions bring back to boil for ten min. Reduce heat to med. Again let simmer one and a half to two hours. Turn pot off and let stand until ready to serve.

 

Notes: store uneaten greens in the frige.can keep for 3-4 days.
