Cilantro Peach Barbecued Ribs


Baby back ribs are grilled with a sauce flavored with cilantro, peaches and apple cider vinegar.



Ingredients:

  • 2 2 lb slabs pork baby back ribs
  • 1 1/2 teaspoons sea salt
  • 1 teaspoon freshly ground black pepper
  • Sauce:
  • 1/2 cup peeled and finely chopped peaches
  • 2 tablespoons apple cider vinegar
  • 1/4 cup finely chopped onion
  • 2 tablespoons Worcestershire sauce
  • 1/4 cup pancake syrup
  • 1/2 cup ketchup
  • 1/2 teaspoon minced garlic
  • 2 tablespoons chopped fresh cilantro
  • 1 teaspoon black pepper

Method

Sprinkle ribs with salt and pepper. Prepare gas or charcoal grill to medium heat. Grill ribs for 1 hour over indirect heat on charcoal or gas grill, turning after 30 minutes. Puree first seven sauce ingredients in blender or food processor. Pour sauce in a small sauce pan. Stir in cilantro and pepper. Brush ribs with sauce every fifteen minutes and continue cooking for 1-2 hours more until 1/4 inch of bone is exposed on ends of ribs and ribs are tender. Serve remaining sauce on side.

Notes: I love to use fruit when I cook pork. The fresh peaches in this recipe make a delicious glaze for the ribs.
