Cider-glazed Pork Loin With Apples

Ingredients:
| ½ cup | Sweet Apple Cider |
| ¼ cup | Honey |
| ½ | Teas. Ground Ginger |
| ½ | Teas. Dry Mustard |
| 2 | Medium Onions,cut Into 6 Wedges Each |
| 4½ lb | Pork Loin Roast |
| 3 | Medium Tart Apples,peel & Quarter |
| 5 | Sweet Potatoes,peel & Quarter,optional |
Directions:
Pour cider into small pan. Bring to a boil over high heat and rapidly reduce by 1/2. Remove from heat; blend in honey,ginger and mustard. Preheat oven to 325^.
Place roast in a shallow roasting pan; surround with onions. Brush roast generously with about 1/3 of the cider mixture.Cover. Place in oven for about 1 3/4 hours to 2 1/4 hours. After roast has baked for about 1 hour, add apples and sweet potatoes,alongside onions. Brush roast with about 1/2 of remaining glaze; uncover and brush remaining glaze during the last 15 to 30 minutes of baking. Pork roast is done when a thermometer inserted into thickest part registers 160^. Transfer roast to a carving board or platter;carve into thin slices. Arrange onion,apples and sweet potatoes around meat before serving.
