Chipotle-rubbed Pork Tenderloin


Pork tenderloins are rubbed with a mixture of chipotle chili powder, brown sugar, onion and garlic powders, paprika, dry mustard, and oregano, then grilled.



Ingredients:

  • 1/4 cup chipotle chili powder
  • 1 teaspoon onion powder
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • 1 3/4 teaspoons salt
  • 1/2 teaspoon dry mustard powder
  • 1 teaspoon Mexican oregano
  • 1/4 cup brown sugar
  • 2, 1-pound pork tenderloins

Method

Combine first 8 ingredients in gallon-size zipper plastic bag. Add tenderloins to spice rub. Turn bag and rub tenderloins to completely cover meat. Chill up to 1 hour. Preheat indoor grill pan or outdoor grill on medium heat. Grill tenderloins approximately 20 minutes, turning at 5 minute intervals. Let meat rest 10 minutes before slicing.

Notes: Serve this delicious pork with Spanish rice and plenty of warmed flour tortillas, salsa, sour cream, and of course, lots of icy cold Mexican beer!
