Chipolte Smoked Glazed Ham

This large smoked ham is smoked again in a smoker and brushed with a glaze that combines pureed chipotle peppers with maple syrup.
Ingredients
- One 10- to 15-lb. pit ham (smoked, cooked boneless ham)
- 4 ounces chipotle peppers
- 1 cup real maple syrup
- Hickory chips

Method
Slow smoke the pit ham, about 35 to 40 minutes per pound at 250 degrees, or until nearly warm. While ham is smoking, puree chipotles with real maple syrup in blender or food processor. About 1 hour before serving, set aside about 1/4 cup of the glaze; brush remaining glaze on ham every 10-15 minutes for about 1 hour, being sure to rotate ham for complete coverage on all sides. Remove ham from smoker and rest ham for 10 minutes. Cut into 1/4 inch slices, arrange on platter, and drizzle with reserved glaze.
