Chinese Carnitas

Tender roast pork flavored with savory spices makes a great snack or meal--serve with a simple homemade plum sauce.
 

Ingredients

  • 4-5 lbs cheap fatty pork; shoulder, butt or country ribs
  • 2 onions, peeled and quartered
  • 4 cloves garlic, crushed
  • 2 inches shredded ginger
  • 1 chipotle and 2 ancho chillies, dried and crushed
  • 2 tbsp whole black peppercorns
  • 2 tbsp schezuan peppercorns
  • 3 star anise
  • 1 cup balsamic vinegar or Chinese black vinegar, or dry sherry
  • 1/4 cup soy sauce
  • 1-2 cups water
  • 1/2 cup milk
  • Plum Sauce:
  • 1/2 can cranberry jelly
  • 1 tbsp balsamic vinegar
  • 2 tbsp soy sauce
  • 1 star anise
  • 1/4 tsp ginger powder
  • 2 tbsp orange juice

Method

Rinse pork, pat dry and add to a pan large enough to accommodate. Add other ingredients and bring to a boil then cover and simmer 4-5 hours, or until meat just falls apart easily. Remove from pan, shread meat with two forks, and place in a roasting pan, not more that one inch thick. Pour milk on meat and roast at 325 degrees for an hour or until meat and drippings are browned. Meanwhile, strain juices, return to a separate pan, and reduce to two cups. If there is a huge quantity of fat, skim off most of it. When pork is browned, add 1 cup reduced juices, scrape up all brown bits and return to oven then roast until juices have been absorbed. Add 1/2 cup juice two more times returning the pan to the oven to roast each time. Roasting time will take approximately 2 hours. To prepare sauce, simply combine all ingredients and mix well.

 

Notes: Serve meat drizzled on pancakes or little corn tortillas with plum sauce, scallions and bean sprouts. Freezes well.
