California Corn Dog

Hot dogs in hoagie buns are topped with a cooked corn and onion mixture that has goat cheese, whipping cream and jalapeno pepper.
 

Ingredients

  • Corn and Goat Cheese Queso:
  • 2 Tablespoons butter
  • 1/2 cup minced onions
  • 3 cups of fresh corn (about 6 ears)
  • 1 Tablespoon chopped garlic
  • 1 jalapeno, stemmed, seeded and chopped
  • 6 ounces goat cheese
  • 1/4 cup heavy whipping cream
  • 1 pkg hot dogs (10)
  • 10 hoagie buns
  • 1 bunch fresh arugula
  • Prepared mustard (optional, but it helps keep arugula in place)

Method

In a saucepan, over medium heat, melt the butter. Add the onions and saute for 2 minutes. Add the corn and saute 10 to 12 minutes. Use a potato masher to mash some of the corn. Stir in the garlic, jalapeno, goat cheese and cream. Season with salt and pepper. Cook until thickened, 3-5 minutes. To prepare hot dogs, grill, boil or broil all hot dogs. Cut Hoagie buns lengthwise not quite all the way through bun. Spread on mustard, add 3 to 4 Arugula leaves. Cut hot dogs lengthwise not quite all the way through. Place hot dog in bun and spoon the corn/goat cheese queso down center of hot dog.
