Breaded Pork Chops

These hand breaded chops are baked with fresh vegetables on them making for a great dinner.
 

Ingredients

  • 8 center cut pork chops
  • 3 cups Italian bread crumbs
  • 3 eggs
  • 1 teaspoon salt, optional
  • 1/2 teaspoon pepper
  • 2 tablespoons garlic powder
  • 2 cups sliced carrots
  • 1 cup sliced celery
  • 1 cup sliced onions
  • 1/4 cup oil
 
Method

Beat eggs in a bowl. Dip pork chops in egg mixture. In a plastic bag, add bread crumbs, salt, pepper and garlic powder. Add each pork chop to mixture, one at a time and shake until well coated on both sides. Place into a hot greased frying pan, brown lightly on both sides and arrange in a large baking dish. Put mixed vegetables on top of chops and bake at 350 degrees for 75 minutes.
