Boneless Pork Chops with Apples & Cranberries


Tender pork chops in a sweet and savory sauce made with apples, cranberries, sun dried tomatoes, sage and thyme.



Ingredients:

  • 1/2 red onion
  • 2 cloves garlic
  • 1 Tablespoon extra virgin olive oil
  • 3 Tablespoons balsamic vinegar
  • 4 Tablespoons fresh apple cider
  • 3 medium size gala apples (red cooking apples)
  • 1/2 cup dried cranberries
  • 1/2 cup sun dried tomatoes
  • 1 spring of fresh thyme
  • 1/2 teaspoon fresh sage
  • Salt and pepper to taste
  • 1/2 cup walnuts
  • 4 boneless pork chops

Method

Preparation: Preheat the oven to 350 degrees. On a cookie sheet, spray olive oil and spread out the walnuts. Cook for 8 minutes and set aside to cool. Coarsely, chop the nuts and set aside. Finely chop the onion and set into a small bowl. Finely mince the garlic and set into another small bowl. Wash the boneless pork chops and cut away any extra fat. Lightly sprinkle salt and pepper on each side and set on a clean plate. In a medium sized bowl, add water till it is 1/2 full and sprinkle 1/2 teaspoon of fresh lemon in the water. After you wash the apples, core and peel. Cut into a small dice and place into the water to prevent browning. Instructions: Heat a large cooking pan to medium and add olive oil and onions. Cook for 1 minute, then add the garlic. Cook for another 35 seconds and then place the boneless pork chops into the pan. Cook each side for 2 minutes to a light golden color. Take the boneless pork chops out of the pan and set on a clean plate. To deglaze the pan, add the balsamic vinegar and apple cider. Let it come to a rolling simmer then add the apples, dried cranberries, sun dried tomatoes, walnuts, fresh sage, and fresh thyme. Let it cook for 1 minute and then return the pork chops to the pan. Set the heat on low and cook for 5 minutes. Take the lid off and re-season with salt and pepper if needed. To reduce the liquid even further, keep the lid off and let the liquid cook for an additional 2 minutes. Let the boneless pork chops rest in the pan with the lid on for 3 minutes.
