BBQ Tennessee Pulled Chicken/Pork Flatbreads

Make an appetizer or a meal out of these savory chicken or pork flatbread sandwiches topped with pesto, scallions and two kinds of cheese.
Ingredients
- 2 1/2 lbs pulled chicken or pork meat
- 1 1/2 cups barbeque sauce
- 12 round flat breads, about 8 inch diameter
- 6 oz prepared pesto
- 6 oz shredded Parmesan
- 6 oz shredded Mozzarella
- 1 bunch scallions, chopped

Method
In a bowl, combine pulled chicken or pork and barbeque sauce then toss to coat. Spread mixture on a sheet pan and place underneath broiler until meat is charred, then remove and cool. Divide mixture into 3 oz portions. Brush each flatbread with pesto sauce and top with a 3 oz portion of meat. Cover with cheese mixture and place underneath broiler to melt cheeses. Sprinkle with chopped scallions.
Notes: To add variety to your party, you may make some with pulled chicken, pulled pork, shredded beef or shrimp.
