Bavarian Chili

This is a great winter day crock pot meal. The fennel seed adds an unusual flavor to the chili as does the sauerkraut.
Ingredients
- 4 24 oz cans whole tomatoes, broken up by hand
- 2 medium onions, chopped
- 1/2 tsp ground thyme
- 2 tbsp cumin
- 1 tsp ground coriander
- 1 tsp dried tarragon
- 2 tbsp chili powder
- 1 tsp black pepper
- 3 tbsp Oriental chili sauce
- 1 tsp salt
- 3 tbsp chopped garlic
- 1/4 cup brown sugar
- 1 can sauerkraut, with juice
- 2 15 oz cans red kidney beans, drained and rinsed
- 2 tbsp balsamic vinegar
- 1 tbsp fennel seed
- 3 stalks celery, chopped
- 6 robust Italian sausages, sliced into 1/2 inch chunks

Method
In a large skillet, heat to medium heat, add celery, onion and Italian sausages. Cook until done then set aside. In crock pot, add tomatoes, thyme, cumin, coriander, tarragon, chili powder, black pepper, Oriental chili sauce, salt, garlic, brown sugar, balsamic vinegar, fennel seed, Italian sausage mixture with onions and celery, including pan drippings. Cook in crock pot on medium for 3 hours, stirring occasionally. Add kidney beans and sauerkraut then cook 1 more hour.
