Bacon Chop Pot

Dinner all in one pot--fried potatoes and pork chops with a little bacon for flavor.
 

Ingredients

  • 1 lb thick cut bacon
  • 3-4 pork chops
  • 5-6 medium potatoes
  • Salt and pepper, to taste

Method

Cut bacon strips into quarters while in package. Chop potatoes into medium chunks and set aside. Cook bacon thoroughly and remove from pan, reserving grease in skillet. With skillet preheated to 350 degrees, place pork chops in skillet and brown lightly. Do not cook, just brown, and remove from skillet. Add potatoes to pan, season lightly with salt, then add back pork chops. Cover and cook, turning potatoes while cooking, leaving pork chops on top of potatoes so they are not in the grease. When the potatoes are almost golden brown, add bacon back to pan. Salt and pepper to taste. Pork chops are done when all the meat has turned white and temperature ia at least 160 degrees.

 

Notes: The chops will be thoroughly cooked by the steam created from the potatoes. It usually takes around 20 mins. Other favorite spices can be used to your particular tastes. This can also make a great breakfast meal. The more bacon potatoes and pork chops you use the more you can feed.
