Bacon Braised with Red Wine and Cranberries

This interesting dish combines flavors of red wine, garlic, and cranberries to bacon for a new tasty dish.
Ingredients
- 1 cup red wine
- 1 cup fresh cranberries
- 1/2 dried cranberries
- 2 Tbsp demerera sugar
- 1 tsp salt
- 2 Tbsp extra virgin olive oil
- 4 garlic cloves crushed
- 1/2 cup sherry vinegar
- 2 Tbsp blackberry preserve
- 6 bay leaves
- 1 1/2 lb piece of bacon with rind

Method
In a bowl combine all ingredients except the bacon. Once the ingredients are mixed add the bacon and marinate in a covered bowl in the fridge for about 4 hours. Preheat oven to 400 degrees. Place bacon into a roasting pan and pour marinade over the bacon. Cover with foil and bake for 35 mins. The remove foil and bake for another 25 mins (or until bacon is cooked though). When cooked slice the bacon and serve with the pan juices.
