Bacon and Egg Salad Sandwich

Two classic sandwiches blended into one new favorite.Ingredients
- 12 slices bacon
- 4 large eggs, hard-boiled
- 8 tablespoons real mayonnaise
- 1 tablespoon yellow mustard
- 1 tablespoon sweet pickle relish
- 2 teaspoons sugar
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 tomato, seeds removed
- 4 large lettuce leaves
- 8 slices white or wheat bread

Method
Fry or microwave bacon slices until extra crispy. Drain on paper towels and set aside. Using completely cool eggs, in a small mixing bowl, mash yolks with a fork or potato masher. Add mayonnaise, mustard, relish, sugar, salt and pepper mixing until well blended. Dice whites of eggs and fold into yolk mixture. Remove seeds and dice tomato. Break up bacon slices into small pieces, but do not crumble. Just prior to serving, fold tomato and bacon into egg mixture. Serve on top of a lettuce leaf between two slices of bread.
