Autumn Pork and Apples

A pork loin roast with slices of apple, potato, & onion plus raisins, is seasoned with brown sugar, allspice & nutmeg, and baked covered.
 

Ingredients

  • 1, 2-2 1/2 lb boneless pork top loin roast (single loin)
  • Dijon mustard
  • 2-3 granny smith or golden delicious apples (peeled and sliced)
  • 1 onion - sliced
  • 1 large sweet potato - peeled and sliced
  • Golden raisins
  • Apple juice
  • 2 teaspoons allspice
  • 2 teaspoons nutmeg
  • Brown sugar or brown sugar replacement (Splenda)
  • Salt/pepper

Method

Preheat oven to 375 degrees. Brush pork with dijon mustard and place in baking dish. Arrange apple, onion, raisins, and potato around pork. Pour apple juice in bottom of baking dish (use 1 to 1 1/2 cups.) Sprinkle all with nutmeg, allspice, salt, and pepper, and sugar (or Splenda.) Cover with foil and bake at 375 degrees F for 60-75 minutes or until pork reaches 160 degrees F.
