August Pork Chop Casserole

This pork chop casserole makes for a hearty and fulfilling dinner and has a great presentation.
 

Ingredients

  • 6-8 medium size, center cut pork chops
  • salt to taste
  • pepper to taste
  • lemon pepper to taste
  • seasoning salt to taste
  • meat tenderizer to taste
  • 10-12 medium size potatoes, peeled and thinly sliced for four different layers
  • 1 small bag carrots, sliced
  • 1 medium onion, peeled and sliced
  • 1 small bag, shredded mixed cheese
  • 1 small bag regular, shredded cheddar cheese
  • 1 regular can green beans, drained
  • 1 can fried onions

Method

Preheat oven to 350 degrees. Remove the bone from the chops and lightly season both sides with meat tenderizer, seasoning salt, salt and pepper. In large casserole dish, spray pan with cooking spray. Line sliced potatoes with first layer, covering bottom of dish. Lightly sprinkle with lemon pepper seasoning. Lightly sprinkle with mixed cheese. Add layer of sliced carrots on top of first layer of potatoes. Add second layer of potatoes. Lightly sprinkle with lemon pepper seasoning. Lightly sprinkle with mixed cheese. Add chops so entire top layer of potatoes and cheese is covered. Add sliced onions on top of chops. Add another layer of potatoes without seasoning. Lightly sprinkle with mixed cheese. Add final layer of potatoes. Lightly sprinkle with lemon pepper seasoning. Cover and bake for 45 minutes to 1 hour or until potatoes are done. Remove from oven and cover top of potatoes with generous layer of cheddar cheese. In a thin line, in center of casserole, spread out drained green beans. Very lightly sprinkle with salt and pepper. Spread fried onions around perimeter of casserole, leaving green beans in center. Recover and bake for another 10-12 minutes. Remove from oven, let sit for 5 minutes.

 

Notes: Cut in squares with spatula, remove, place on plate and dig in. No need to add any cream of soups or any liquids. The potatoes will provide all the liquid needed.
