Apricot Pork Loin

Apricot, blue cheese and bacon stuff these pork loins and a slice of bacon wraps around them to make a delicious and gourmet dinner.
 

Ingredients

  • 2 1/2 pound pork loin
  • 1 cup apricot preserves, divided
  • 1/2 cup cooked diced bacon
  • 1 cup blue cheese
  • 6 slices raw slices of bacon
  • 1/4 cup white wine

Method

Preheat oven to 375 degrees. Butterfly pork loin by cutting as if un-rolling a jelly roll until flat. Spread with 1/2 cup apricot preserves, add blue cheese then bacon bits. Roll up pork loin placing seam on bottom. Take the raw bacon slices and wrap the loin with them (doesn't have to cover it solidly). Place seam side down, on a roasting rack over a roasting pan and place in oven. Bake for 45 minutes. Remove from oven and remove loin from rack and wrap tightly with aluminum foil, let set for 20 minutes to continue to cook. In a small saucepan, blend the wine and remaining preserves until fully melted. Slice loin into 1/2 inch portions. Place on platter and pour preserve and wine mixture over top.
