Apple Butter-Crusted Dijon Pork Loin

This pork roast is marinated with Dijon mustard then baked covered with apple butter. The apple butter forms a tasty crust on the pork.
Ingredients
- 1 3- to 4-lb. boneless pork loin
- Olive oil
- Salt and ground black pepper
- 1/2 cup Dijon-style mustard
- 1 1/2 cups apple butter
- 1/2 cup water

Rub pork with olive oil, then salt and pepper. Coat the pork loin with a generous layer of Dijon mustard and refrigerate for at least one hour. You may also refrigerate overnight. Pre-heat oven to 375 degrees. Place pork in an oiled Dutch oven, add water to pan, and spread all sides of pork with apple butter. Bake pork loin, covered, for 45 minutes. After 45 minutes remove cover and bake an additional 20 to 30 minutes or until an instant-read thermometer inserted in meat registers 160 degrees. The apple butter should form a light crust.
Notes: The Dijon mustard and complementary apple butter adds a unique flavor to the pork. This is a great low-fat, healthy main dish and goes well with a variety of vegetables- my family especially likes it with Brussels sprouts.
