Apple and Onion Tenderloin

A pork tenderloin roast is coated with honey mustard and served with a mixture of onion, apple, and wine or cider.

Ingredients
  • 1 lb. pork tenderloin roast
  • 4 Tablespoons honey mustard
  • 1 large onion, thinly sliced
  • 2 medium apples, thinly sliced
  • 1/2 cup dry white wine or apple cider
  • Salt and pepper to taste
 
Method

Preheat oven to 425F. Heat an oven-proof skillet, coated with non-stick spray over medium-high heat; quickly sear roast on all sides. Remove from skillet and let cool slightly; spread with mustard. Place tenderloin in roasting pan and roast for 20-25 minutes. Meanwhile re-coat skillet with non-stick spray and place over medium heat. Add onion and apples; cook for 5 minutes; add wine or cider and reduce heat, cooking until softened. Add salt and pepper to taste. Remove roast from oven and let rest for five minutes. Slice and serve with apple-onion sauce.
