American Pork Fried Rice

Tender slices of leftover ham are perfect for making a fabulous stir-fry. This is not an authentic Asian recipe.

  • Servings: 4 - 6
  • Prep Time: 10 minutes
  • Cook Time: 20 minutes
  • Total Time: 30 minutes

Ingredients:

4 cups Cooked Rice
1 lb Bacon
1 lb Ham
1 Onion
1 can (28 Oz) Chinese Vegetables, drained
½ cup Soy Sauce

Directions:

Prepare the rice and set aside. Chop the bacon, ham, and onions. Brown the bacon until crispy in a large deep pan over medium/high heat. Do not drain the grease. Add the ham and cook until heated. Add the onion, vegetables, soy sauce, and cooked rice. Mix together and cook uncovered for 10 to 15 minutes until the vegetables are hot but still a little firm. Serve with a fork.

Helpful Tips:

TIPS • Chop and add any vegetables - peas, carrots, broccoli, cauliflower, green onions, bell peppers, etc. • Use frozen stir-fry vegetables instead of canned or add both. Frozen peas are good too. • Also good made with chicken, seafood, or beef. Cut beef into thin strips, not cubes. • Substitute the rice for cooked Chinese or spaghetti noodles and it becomes Lo Mein. I have never seen ham or bacon on a Chinese menu. I guess I will have to say this is a “Made In America” pork stir-fry. It is so easy to make. It is a way to get your kids to eat vegetables.
